How To Turn a $55 Grocery Haul into 20 Healthy Meals

Groceries are getting more and more expensive and it can be so tough to figure out how to budget for groceries while also eating delicious and healthy meals. That’s why I created my series where I give you all the tools to do just that! This is the full post from my latest grocery series where I took a single $55 grocery trip and turned it into five different recipes, or 20 servings of delicious, healthy food! This series was inspired by my frustration with the rising prices and my desire to continue to eat healthy meals while still operating within a tight budget, I hope it helps!

This is my winter edition of this series! If you love to eat veggie and protein packed meals but want to cut back that grocery bill, try getting the groceries from the list below, and following along with my recipes!

Grocery List:

  • 1 head of broccoli (~6 cups chopped)
  • 1 head of cabbage (~8-10 cups shredded)
  • 1 head of garlic (10-12 total cloves)
  • 1 shallot
  • 1 large yellow onion
  • 6oz fresh baby spinach
  • 4 medium russet potatoes
  • 2 lbs whole carrots
  • 2 15oz cans of corn
  • 1 head of cauliflower (~6 cups chopped)
  • 3 lemons
  • 1 lb ground turkey
  • 12oz chicken sausage
  • 3.5lbs bone-in chicken thighs
  • 14oz firm tofu
  • 3 cups dry rice of choice (I use basmati)
  • 12oz gluten-free pasta
  • 13.5oz can full-fat coconut milk
  • 15oz can chickpeas
  • 32oz veggie or chicken broth
  • 6oz tomato paste
  • 8oz tahini

Household Spices/Sauces:

  • olive oil
  • salt & black pepper
  • smoked paprika
  • dried basil
  • dried oregano
  • red pepper flakes (optional)
  • maple syrup or honey
  • arrowroot starch, corn starch, or tapioca flour

  1. This grocery series was amazing! Every dish is a hit! My partner is a very picky eater, and even he loved all of it. We’ve done this series twice now. The soup is amazing, and I love how it’s dairy free but still has that thick, creamy texture that dairy often gives soups. I could also eat the lemon basil meatballs like every week.

    If there are some people hesitant (like my partner was) here are some things we did to sub ingredients he’s doesn’t really like. We used chicken instead of tofu which does change the price a little but it’s not bad. Also, my partner doesn’t like cooked spinach (it’s a texture thing) so the second time around we subbed the spinach with brussels sprouts on the side.

  2. Hello! I’m excited to try this series! I was wondering, do any of the recipes freeze well? I’m cooking for one and don’t want the food to go to waste! Thanks for the advice!
