if you’re focusing on more protein in 2024 (I am!!) then making a quick batch of these sun-dried tomato & basil meatballs sounds like a great choice! 🍅🌿

you can eat them alone covered in the sauce or pair with some veggies or rice! they’re also freezer-friendly — just freeze the meatballs and sauce separately!

meatballs:
2 lbs ground turkey
2-3 garlic cloves, finely minced
1 egg, beaten
1/2 cup fresh chopped basil leaves
1/2 cup sun-dried tomatoes, finely chopped
1 tsp salt
1/2 tsp black pepper
1/2 cup almond flour

sauce:
2 tbsp olive oil
1/2 cup sun-dried tomatoes
2 cups chicken broth
1 cup full-fat coconut milk
3 cups baby spinach
1 cup fresh chopped basil leaves
juice of 1/2 lemon
salt & black pepper to taste

preheat oven to 400 and line a large baking sheet with parchment. in a mixing bowl, add all of the meatball ingredients and use a spatula or clean hands to mix well

use a cookie scoop or spoon to form the mixture into 18-22 evenly sized meatballs. place on the baking sheet with space between each and bake for 14-18 mins, until at an internal temp of 165 degrees

while they bake, heat the olive oil over medium heat in a deep skillet, then add the sun-dried tomatoes and cook for 2-3 mins, stirring occasionally. pour in the chicken broth and coconut milk and bring to a simmer

mix the spinach and basil into the sauce and wilt down, then add the lemon juice and season to taste. when the meatballs are done baking, add them directly to the sauce and use a spoon to coat them in liquid. remove from heat and serve!

this creamy mushroom chicken is fitting the vibe for my winter cozy meals!! a new go-to dinner recipe that’s surprisingly dairy & gluten free 👏💝

I actually used to be a mushroom hater back in the day but they’ve really grown on me!! anyone else?!

here’s everything you need to make it:

- 2-3 tbsp olive oil
- 1 +1/2 lbs thinly sliced chicken breast + salt & black pepper to season
- 1/3 cup tapioca flour
- 1/2 yellow onion, diced
- 4 garlic cloves, minced
- 12oz sliced white mushrooms
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp oregano
- 1/2 cup chicken broth
- 1 cup full-fat coconut milk
- 1/3 cup fresh chopped parsley

start by heating the oil over medium heat in a large skillet. meanwhile, season the chicken with salt and pepper all over, then toss in the tapioca flour to coat. when the oil is heated, add the chicken to the pan and cook for about 7 minutes on each side, until crisp and fully cooked through to an internal temp of 165 degrees. set aside.

add the diced onion to the same pan (add a drizzle of additional oil if needed) and sauté until translucent. add in the garlic, salt, pepper, thyme, and oregano and cook for another 1-2 minutes to get aromatic. add in the mushrooms, mix to combine and sauté for 5-7 minutes to soften. pour in the broth and coconut milk, bring the mixture to a simmer and cook for about 5 minutes before removing from heat and adding back the chicken. top with the chopped parsley and enjoy immediately for best results 💕

one of the most common DMs I get is “I want to start meal prepping but I don’t have the time” & my response is usually to try one of these 3 things!!

meal prep doesn’t mean spending 8 hours making an entire week’s worth of meals, just getting one meal ready for you can be so helpful—it all counts!! 🫶💗

I. COOK ONCE, EAT TWICE🍴instead of a full fledged meal prep, but make a double portion of your dinner each night so you have lunch made for the next day
2. PREP YOUR DINNER DURING BREAKFAST 🍳 while your breakfast cooks, do something to get dinner ready for that night. marinate chicken, roast veggies, start the slow cooker, etc.
3. SET A 60 MINUTE MEAL PREP TIMER ⏱️ when you get home from the grocery store, set a 60 min timer to do some ingredient prep for the next few days-think basic proteins, veggies, & grains that cook quickly & store easily

@madein’s amazing knives, plateware, and stainless steel pans made the entire thing possible 🫶 the dinner plates & side bowls made the table look so nice, these ones are my new favorite plates + they’re chip and stain resistant!

you probably already know how much I love the stainless steel pans—the ones I featured here are the saucier pan, saute pan, and 12” frying pan! the 8” chef’s knife is also my go-to for chopping.
