How To Turn a $50 Grocery Haul into 10 Healthy Meals

If you feel like your grocery bill continues to increase lately, you’re definitely not alone. This series was inspired by my frustration with the rising pricing and my desire to continue to eat healthy meals while still operating within a tight budget. If you love to eat veggie and protein packed meals but want to cut back that grocery bill, try getting the groceries from the list below, and following along with my recipes!

Grocery List:

  • 1 lime
  • 2 avocados
  • 1 lb cauliflower rice
  • 2 hearts of romaine lettuce
  • 1 lb edamame beans
  • 4-5 green onions
  • 1 bunch of cilantro
  • 5oz bag spinac
  • 2-3 cups shredded carrots
  • 1 english cucumber
  • 2 lbs boneless chicken breast
  • 1 package chicken sausage (5 links)
  • 16oz firm tofu
  • 2 cups quinoa
  • 15oz can corn
  • 15oz can black beans
  • 32oz low sodium vegetable broth
  • 1 small jar creamy peanut butter
  • garlic powder
  • smoked paprika
  • cumin
  • red pepper flakes, optional

Pantry Staples:

  • kosher salt & ground black pepper
  • olive oil
  • rice vinegar
  • coconut aminos or reduced sodium soy sauce
  • maple syrup
  • sriracha
  • cornstarch, arrowroot starch, or tapioca flour
  • sesame seeds (optional)

All 5 of the healthy meals are below – each one serves at least 2 people!

  1. What chicken sausage do you get that is gf and DF? Maybe it’s not Casin free but curious of the brand

  2. I’m 27 and no where near as skilled with meal planning and cooking. Foods with many ingredients seem to always taste the best, but more ingredients = more cost. But the sauces and dressings really make the difference there! It hit me after reading and seeing all of these recipes from you! ❤️ If you want complex flavors, but can’t afford a five course meal every day, you can still have different sauces and dressings to mix it up! 🙌
