How To Turn a $50 Grocery Haul into 20 Healthy Meals
If you’re new here, my budget grocery series is where I show you how a little bit of planning can really help reduce grocery costs, even when you’re eating nutritious, delicious meals. I started doing this series in early 2023 and every time I do, I have more and more fun with putting the menu together. This week, I shared my most recent iteration where I took a $50 grocery haul and turned it into five recipes. It’s no secret that groceries are getting more and more expensive and it can be so tough to figure out how to budget for groceries while also eating delicious and healthy meals. My hope as always is that this grocery list and meals to go along with it help you and your family eat well on a budget.

Grocery List:
- 1 large yellow onion
- 1 head of garlic
- 1 english cucumber
- 1 cabbage head (about 8-9 cups sliced)
- 1 red bell pepper
- 1 jalapeño pepper
- 2 limes
- 10oz baby bella mushrooms
- 1 green onion bunch (about 6)
- 1 cilantro bunch (about 2 cups)
- 1 basil bunch (about 2 cups)
- 1 lb chicken breast
- 1 lb ground pork
- 1 lb ground chicken
- 14oz block firm tofu
- 10-12 corn tortillas
- 15oz chickpea can
- basmati or jasmine rice (3 cups dry)
- 32oz chicken or veggie broth
- 13.5oz can full-fat coconut milk
- 6oz tomato paste
- 8oz jar sun-dried tomatoes
- 14oz GF pasta (I did TJ’s brown rice penne, which has 16oz)
Pantry staples to have on hand:
- olive oil
- sesame oil
- coconut aminos, tamari, or soy sauce
- maple syrup
- rice vinegar
- sriracha
- salt & black pepper
- garlic powder
- ground ginger
- chili powder
- ground cumin
- dried oregano
- red pepper flakes (optional)

Just a heads up I think spinach/shallots are missing from the full grocery list… I copy and pasted and then went to cook tonight and didn’t have what I needed 🙁
Hi Michelle! I think you’re looking at the wrong grocery list here – are you meaning to be looking at the March 2024 list? There are no shallots or spinach in this list or in any of these recipes.

I just discovered your instagram and I tried this meal plan the past week. It was a huge hit! I love to cook, but I hate to plan and I hate waste. I ended up with 4 tortillas and 1/2c of cilantro left over and that was a huge milestone. I’m trying the August 2024 video this coming week.
