Berry Vanilla Chia Pudding


You know I love an easy prep, so this variation uses frozen berries, no prep required! The vanilla comes from both vanilla extract and protein powder, it gives summer-dessert vibes that feels a little fancy without trying too hard. This recipe gives you the measurements for each jar, add these measurements to each jar you make for the week!

Berry Vanilla Chia Pudding Ingredients

Chia Seeds: The powerhouse of chia pudding! Chia seeds are tiny but mighty—packed with fiber, omega-3s, and protein. When soaked in liquid, they expand into a gel-like texture that’s perfect for puddings and overnight breakfasts. In this recipe we’re blending them, which helps create a smooth texture.

Frozen Mixed Berries: A quick and easy way to add fruit to your breakfasts! These are perfect for chia pudding since they defrost slowly as the chia pudding sets. By the time you’re ready to enjoy them, the fruit is perfectly soft. You can easily swap for fresh chopped fruit if desired.

Maple Syrup: Unlike regular sugar, maple syrup blends smoothly into liquids and brings its own subtle flavor. In this chia pudding, it lightly sweetens the mix without overpowering it, keeping the treat balanced and not too rich.

Vanilla Protein Powder: This is what helps keep chia pudding filling, and gives a nice flavor boost that pairs well with the frozen berries. You’ll be adding 1 small scoop to each jar, if you don’t want to buy a full container, grab a few sample packs!

Ingredients

  • 3 tablespoons chia seeds

  • 2 tablespoons vanilla protein powder

  • 1/8 teaspoon kosher salt

  • 3/4 cup  milk of choice (almond, coconut, soy, cow’s milk)

  • 1 teaspoon vanilla extract

  • 1/4 cup frozen mixed berries

  • optional toppings: additional mixed berries, honey or maple syrup

Directions

  • Add the chia seeds, protein powder, and salt to a jar and mix to combine.
  • Pour in the milk and vanilla and stir to combine, ensuring no clumps of chia seeds are left at the bottom of the jar. Fold in the mixed berries.
  • Place a lid on the jar and refrigerator for at least 6 hours or overnight for best results. Before serving, optionally top with additional mixed berries and honey or maple syrup.

Notes

  • Storage: Keep refrigerated for up to 4 days.
  • Protein Powder: If you don’t have a container on hand, pick up a few sample packets! This is a low cost way to make sure your chia puddings have enough protein.

  1. I used unflavored protein powder since that’s what I had on hand, so I added a teaspoon of maple syrup for a touch of sweetness. For toppings, I used nuts, coconut flakes, and cinnamon. I prefer things less sweet, and this combination turned out great! Thanks for the recipe, it’s a delicious and easy way to get more fiber and protein in!
