Chicken Sausage and Veggie Sheet Pan


Sheet pan meals are an easy way to get in extra veggies without a whole bunch of extra effort. Just throw everything onto a pan, pop it in the oven, wait, and eat! This one is especially great because, with pre-cooked chicken sausage, you don’t have to worry about making sure the meat is cooked to this temperature or that temperature. You just cook the veggies to as done as you’d like them to be and enjoy!

Ingredients

  • 1 medium head of broccoli, chopped into florets

  • 1 pound brussels sprouts, halved

  • 1 medium sweet potato, 1/4 to 1/2-inch dice

  • 12 ounces pre-cooked chicken sausages, thinly sliced (4 links)

  • 2 tablespoons olive oil

  • 1 tablespoon smoked paprika

  • 1 teaspoon kosher salt

  • 1/2 teaspoon ground black pepper

Directions

  • Preheat the oven to 400ºF
  • Add the broccoli, brussels sprouts, sweet potato, and sliced chicken sausages to a large lined sheet pan.
  • Add the oil, smoked paprika, salt, and ground black pepper. With a spatula or clean hands, toss everything to evenly coat in the oil and spices.
  • Bake until the broccoli, brussels sprouts, and sweet potatoes are fork tender and lightly crisp, about 30 minutes.

  1. A great weeknight dinner that is quick and healthy! We added a drizzle of balsamic glaze and some goat cheese crumbles and it was delicious!
