Here is some plant-based, gluten-free meal prep inspo for ya β€” spicy black bean burgers! πŸ”₯πŸ’ƒπŸΌπŸ”πŸŒ½ These plant based burgers are made with black beans, corn, onion and green chiles for the best texture and spiced with smoked paprika, cumin + cayenne for πŸ”₯πŸ”₯πŸ”₯ my new favorite lunch!

Ingredients

  • 1 yellow onion, chopped

  • 3 minced garlic cloves

  • 2 tbsp avocado oil

  • salt

  • black pepper

  • 1 smoked paprika

  • 1 chili powder

  • 1 cumin

  • 1/4 cayenne pepper

  • 2 eggs beaten

  • 2/3 cup corn

  • 1/4 cup green chiles

  • 3 chopped chipotles in adobo (with sauce) (make sure these are gf if you don’t eat gluten)

  • 1/3 cup almond flour

  • 3 and 1/2 cups black beans

Directions

  • sautΓ© the onion + garlic until browning in the avocado oil, the mix in all the spices.
  • in a mixing bowl, add the beaten eggs, onion + garlic mixture, corn, chiles, chipotles + almond flour and combine.
  • add in the black beans and combine, then use a fork to smash the black beans, leaving some intact depending on the texture you prefer.
  • shape into ~10 burgers and bake on 325 for 25 min, flipping halfway through.
  • store in the fridge or freezer until enjoying! ☺️

    I made these DELICIOUS burgers tonight. I am not a vegetarian, health foods junkie so I was skeptical, then SURPRISED at how yummy and tasty they were. One thingβ€”they tended to fall apart a little. Next time maybe I’ll put the beans in the food processor?
