Soaked cashews actually make for a great dairy substitute and that’s shown off in this creamy cashew pasta recipe. This one is from my May 2023 series where I took a $50 grocery list and turned it into a week of dinners, and I got great feedback on it from vegans and meat eaters alike!

Ingredients

  • 1 1/4 cups raw cashews

  • 12 oz brown rice pasta (or pasta of choice)

  • 2 garlic cloves

  • 1/2 tsp ground black pepper

  • 2 tsp kosher salt

  • 1 tsp Italian seasoning

  • 1 cup low sodium chicken or vegetable broth

  • juice of 1 lemon

  • 1/4 cup nutritional yeast

  • 1 cup chopped broccoli florets (about 1/3 of a head of broccoli)

  • 1/3 cup fresh parsley, chopped

Directions

  • Add the cashews to a medium bowl or glass jar. Fill the bowl with hot water until all the cashews are covered. Set aside to soak for 30 minutes.
  • While the cashews soak, bring a large pot of water to a boil. Add the pasta and cook until al dente, about 8 minutes. After 5 minutes, add the chopped broccoli to the pot with the pasta to steam. Continue to simmer for 3 minutes, then drain and set aside in the large pot.
  • Add the soaked cashews, garlic, salt, ground black pepper, Italian seasoning, chicken broth, lemon juice, and nutritional yeast to a food processor or blender. Blend on high speed until completely smooth, about 60 seconds. If the sauce is too thick, ad water 2 tablespoons at a time to thin.
  • Pour the sauce over the cooked pasta and broccoli and stir to evenly combine. To serve, top with chopped parsley and enjoy.

  1. If you are wondering if you add the water and the cashews from soaking the cashews, it’s definitely a no. I am left with a very watery sauce… oops.
