CRISPY BRUSSELS SPROUTS WITH BACON & TAHINI SAUCE

Hands down, brussels sprouts are my favorite thing to eat in the fall. While they are great alone, brussel sprouts paired with bacon is a match made in heaven. I’m sharing this recipe because it’s one I make often for my family and it’s always a hit! Try out the tahini sauce and you won’t be able to stop eating them!  They’re the perfect autumn side dish.

Ingredients

  • BRUSSLES & BACON
  • 2 cups brussel sprouts, halved

  • 2 tbsp avocado oil

  • 1 tbsp garlic powder

  • 1 tsp salt

  • 1/2 tsp pepper

  • 3 pieces uncured bacon

  • TAHINI SAUCE
  • 1/4 cup tahini

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tbsp warm water

  • 1 tsp parsley

Directions

  • Preheat oven to 375 degrees. Prepare brussel sprouts by washing and halving all and putting in a large bowl.
  • Drizzle the avocado oil, garlic powder, salt and pepper on the brussles and mix until all of them are covered in spices.
  • Transfer the brussels sprouts to a large sheet pan, making sure none are on top of each other. Cut the slices of bacon into small pieces and add to the pan, evenly spacing them out.
  • Bake for 20-30 minutes, until brussels sprouts are tender but crispy, and bacon is fully cooked.
  • While those bake, whisk together tahini, olive oil, lemon juice, water and parsley in a small bowl to prepare the tahini sauce. Drizzle over brussel sprouts and bacon and serve.
