Dark Chocolate Strawberry Bark


This Dark Chocolate Strawberry Bark is the ultimate sweet treat after a long day. Combining all my favorite flavors of a deep, rich dark chocolate, tart strawberries, almonds for crunch, and a salty topping, you’ll have to try hard not to eat it all at once. Perfect for sharing with that special someone, or enjoying all to yourself, this recipe is quick and easy, coming together in just 25 minutes (most of which is cooling time!).

Dark chocolate: Look for a dark chocolate with a high cocoa content for increased antioxidants and fiber! Dark chocolate has been found to have heart healthy benefits, although always consume in moderation, due to the sugar content. I prefer dark chocolate for it’s rich, deep flavor, but you could also opt for milk chocolate here if you prefer.

Almonds: The recipe calls for raw unsalted almonds, if you prefer a more savory bite use roasted and salted, or even candied almonds. Be sure to roughly chop these either in a food processor or by hand to get an evenly coated crunch in each bite.

Almond butter: The addition of creamy almond butter gives this bark a deeper, rich flavor than traditional dark chocolate. Paired with the chopped almonds, you get an additional layer of nuttiness.

Freeze dried strawberries: The dried strawberries add a lovely pop of color and texture to this bark, while also maintaining much of their nutritional value. Dried strawberries often taste more tart than fresh ones, however take note of freeze dried vs dehydrated strawberries when in the grocery store, as dehydrated berries often lose much of their nutritional value in the heating process.

Flaky salt: While optional, I would argue that the flaky sea salt takes this bark to the next level. The sweetness with the saltiness is everything you want in a late night snack. My favorite flaky salt perfect for garnishing is this one!

Ingredients

  • 3/4 cup dark chocolate chips

  • 2 tablespoons creamy almond butter

  • 1/3 cup roughly chopped almonds

  • 1 cup freeze-dried strawberries

  • flaky salt, for topping (optional)

Directions

  • Line a small sheet pan (13 x 9.5-inch) with parchment paper. Set aside.
  • Add the chocolate chips and almond butter to a microwave-safe mixing bowl and microwave in 15-second increments until the chocolate is melted. Stir to evenly mix after each increment.
  • Add the almonds to the mixture and mix to combine.
  • Transfer to the prepared sheet pan and spread it out into a 1/4-inch thick, or less, rectangle.
  • Sprinkle the freeze-dried strawberries on top of the chocolate, pressing down gently to stick, followed by a few pinches of flaky salt.
  • Chill until hardened, about 20 minutes.
  • Cut or break the hardened bark into eight evenly sized pieces. Keep refrigerated in a sealed container.

Notes

  • Store it: Keep refrigerate in a sealed container for up to 3 days.
