GRILLED SHRIMP TACOS WITH AVOCADO SAUCE

When I think of summer, I think of tacos! Especially ones with lots of bright flavors and fresh tastes, just like these simple grilled shrimp tacos with avocado sauce. These tacos come together very quickly and you can either grill your shrimp or saute it, so there’s an option no matter what you’re working with. Ingredients

  • For the Shrimp
  • 24 medium frozen shrimp, shells removed

  • 2 tablespoons olive oil

  • 1 teaspoon kosher salt

  • 1/2 teaspoon ground black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon smoked paprika

  • For the Avocado Sauce
  • 1/2 avocado, pitted

  • 1/3 cup olive oil

  • 1 tablespoon apple cider vinegar

  • Juice of 1 lime (about 3 tablespoons)

  • 1/2 teaspoon kosher salt

  • For Assembly
  • 12 corn tortillas, warmed

  • 2 ears corn, cooked and sliced off the cob

  • 1 cup arugula

  • 1/2 cup fresh chopped cilantro

  • Juice of 1 lime (about 3 tablespoons)

Directions

  • Add the shrimp, olive oil, salt, pepper, garlic powder, and smoked paprika in a bowl and toss to evenly coat.
  • Heat a grill, grill pan, or a cast iron skillet over medium heat. Add the seasoned shrimp and cook until opaque, about 5 minutes on each side. Set aside. If using a pan or skillet, work in batches.
  • Prepare the sauce: add the avocado, olive oil, apple cider vinegar, lime juice, and salt to a blender or food processor. Blend on high speed until sauce is smooth, about 30 seconds. Add additional olive oil as needed to thin.
  • To assemble, divide the arugula and corn evenly among each tortilla. Add 2 to 3 grilled shrimp to each. Top with the avocado sauce, chopped cilantro, and lime juice.
