Mediterranean Inspired Quinoa Salad

If you were to ask me what my perfect meal prep line up is, it would definitely include my mediterranean inspired quinoa salad. The main reason is because it’s a meal I ALWAYS look forward to eating. Also, it’s super easy to make, only requires a few simple ingredients, and has the best tahini dressing on top. If you need something quick but nourishing to make this week, try it out! I also recommend pairing it with some cooked tofu, chicken, or chickpeas for some extra protein.

Mediterranean Inspired Quinoa Salad Ingredient Notes

Quinoa: This gluten-free grain is packed with plant-based protein and has a light, fluffy texture that holds up beautifully in salads. It absorbs flavor well and keeps you full without feeling heavy. Quinoa is also rich in fiber and essential minerals like magnesium and iron. In this recipe, it’s the perfect base for a bright, Mediterranean mix.

Cherry Tomatoes: Juicy and sweet, cherry tomatoes bring vibrant color and a burst of freshness to every bite. Their natural acidity balances the richness of the tahini dressing and salty feta. When halved, they mix seamlessly into the salad without watering it down. They’re a quick and flavorful way to add veggies and antioxidants.

Feta Cheese: Crumbly, tangy feta adds creaminess and a salty punch that enhances the salad’s overall flavor. It pairs especially well with the fresh herbs and lemony dressing. The cheese’s firm texture holds up well in meal prep and doesn’t get soggy. It’s a Mediterranean staple that ties the dish together.

Tahini: Made from ground sesame seeds, tahini brings a nutty, rich depth to the dressing without dairy. It emulsifies well with vinegar and lemon juice, creating a creamy consistency. Tahini is high in healthy fats and adds a satisfying savory element. It’s what gives the dressing its signature Mediterranean flair.

Ingredients

  • Quinoa Salad:
  • 1 cup dry quinoa (3 cups cooked)

  • 1 pint cherry tomatoes, halved (about 1 1/2 cups)

  • 1 English cucumber, diced

  • 3/4 cup crumbled feta cheese

  • 1/4 cup fresh chopped dill

  • 1/4 cup fresh chopped parsley leaves (optional)

  • Tahini Dressing:
  • 3 tablespoons apple cider vinegar

  • 3 tablespoons tahini

  • 2 tablespoons olive oil

  • juice of 1 lemon

  • 1 teaspoon kosher salt

  • 1/2 teaspoon ground black pepper

  • 1/2 teaspoon garlic powder

Directions

  • Prepare quinoa according to package instructions (1 cup dry quinoa to 2 cups water). Let cool completely before assembling.
  • Meanwhile, make the tahini dressing. Add all ingredients—the apple cider vinegar, tahini, olive oil, lemon juice, salt, ground black pepper, and garlic powder—to a small bowl or jar. Whisk or shake vigorously for 30 to 45 seconds, until smooth. Add warm water, 1 tablespoon at a time, as needed to thin the dressing.
  • Add the cooked and cooled quinoa, cherry tomatoes, cucumber, feta, dill, and parsley to a large mixing bowl. Pour the dressing over the salad and toss to evenly disperse all of the ingredients.
  • Serve immediately or store in a sealed container in the refrigerator for up to 4 days.

Notes

  • Storage: Refrigerate in a sealed container for up to 4 days.
  • Quinoa: Don’t have quinoa on hard? No problem. This recipe works well with farro, brown rice, or even your favorite pasta salad pasta.

  2. I’ve made this recipe several times. It’s winner! Made with dairy free/gluten free feta I got at Trader Joe’s (have seen since that many supermarkets carry dairy free feta) and I used red bell pepper since I didn’t have any tomatoes. Just delicious! And I’ve made it (accidentally) without the fresh herbs (parsley and dill) and it was still great!

  3. Excellent salad! I used about half the olive oil because I like a little more tart dressing and it’s nice to save a few calories. Would definitely make again:)

  4. Could you sub red bell pepper for the tomatoes? I am not a huge raw tomato fan.
