How To Turn a $55 Grocery Haul into 20 Healthy Meals

If you’re new here, my budget grocery series is where I show you how a little bit of planning can really help reduce grocery costs, even when you’re eating nutritious, delicious meals. I started doing this series in early 2023 and every time I do, I have more and more fun with putting the menu together. This week, I shared my most recent edition where I took a $55 grocery haul and turned it into five recipes. With groceries getting more and more expensive and it’s challenging to figure out how to budget while also eating delicious and healthy meals. My hope as always is that this grocery list and meals to go along with it help you and your family eat well on a budget.

Grocery List:

  • Produce
  • 1 garlic bulb
  • 2 lemons
  • 3 limes
  • 4 medium sweet potatoes
  • 1 medium cauliflower head
  • 1 pound whole carrots
  • 12 ounces sugar snap peas
  • 6-ounce bag baby spinach
  • 1 cilantro bunch
  • 1 green onion bunch (8-10 total)
  • 16 ounces frozen peas
  • Canned/Packaged
  • 15-ounces canned corn
  • 13.5-ounce can full-fat coconut milk
  • 16-ounce jar roasted red peppers
  • 32-ounce container low-sodium vegetable broth (or low-sodium chicken broth)
  • Jasmine rice (3 cups dry total)
  • Proteins
  • 2 pounds boneless, skinless chicken thighs
  • 1 pound 85% lean ground beef
  • 1 pound ground chicken
  • 15-ounce can black beans
  • 15-ounce can chickpeas
  • kosher salt & ground black pepper
  • smoked paprika
  • chili powder
  • cumin
  • dried oregano
  • dried rosemary

Pantry staples to have on hand:

  • olive oil
  • toasted sesame oil
  • coconut aminos (or reduced-sodium tamari or reduced-sodium soy sauce)
  • rice vinegar
  • sriracha (optional)
  • tapioca flour (or arrowroot starch or cornstarch

  1. I love your recipes and been following for a while. These grocery series are the best and so helpful!
    I gotta say though I dont know how you spend $55 I tried it in California and Utah and its always around $70.
    Regardless, thank you so much for saving the day with healthy and delicious recipes!

    1. I live in California and mine comes around 60. Are you also purchasing the pantry items? I think the 55 dollars is only for the grocery.

  2. I think this is the third grocery series I’ve done. Again, all the recipes are amazing! So, so much flavor… I substituted ground turkey for ground chicken in the meatballs since that is way cheaper here, and when I was cooking it my sister wanted to know exactly what I was making because it smelled like a restaurant. Thanks so much and keep them coming!

  3. I’ve made 4 of the 5 recipes so far and all I can say is WOW! I’m a mom of an active toddler and managed to whip up a meal after work 4 days this week, on a budget. They were also yummy, especially the meatball dish and sweet potato dishes which were my favorites!
