By using spaghetti squash, you pack in more fiber with a hidden serving of veggies. And the lemony olive oily sauce brings this delicious shrimp dish together.

By using spaghetti squash, you pack in more fiber with a hidden serving of veggies. And the lemony olive oily sauce brings this delicious shrimp dish together.

Ingredients

  • 1 spaghetti squash + olive oil, salt, & black pepper for coating

  • 3 tbsp olive oil

  • 4-6 garlic cloves, minced

  • 1+ 1/2 cups chopped broccoli florets

  • 12-16 jumbo shrimp, shells removed

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/4 cup lemon juice

  • 1/2 cup fresh chopped basil, for topping

Directions

  • Preheat oven to 400 degrees and line a sheet pan with parchment paper.
  • Slice your spaghetti squash in half and remove the seeds (it’s easier to cut in half after stabbing with a fork a few times and then microwave for five minutes). Drizzle with olive oil, salt, and pepper. Place face down on the sheet pan and bake for 35-40 minutes, until tender to a fork.
  • Heat the olive oil in a large skillet over medium heat, then add the garlic. Saute for 1-2 minutes, then add the broccoli, shrimp, salt, and black pepper.
  • Cook the shrimp for 2-3 minutes on each side to fully cook. Add the lemon juice and cook down for another 1-2 minutes.
  • When the spaghetti squash is done cooking, use a fork to scoop out the insides (you can leave it inside the squash to eat out of or transfer to bowls). It should come out looking like your favorite spaghetti.
  • Top the spaghetti squash with even servings of the shrimp and broccoli mixture, plus fresh chopped basil leaves.
