If you’re looking for an easy way to get a budget-friendly dinner on the table, try these lemon chicken thighs with broccolini. Everything comes together in one pan, making dinner time (and clean-up time) so easy, but still producing a delicious, flavorful meal. Ingredients

  • 3 + 1/2 lbs bone-in, skin-on chicken thighs

  • 1 + 1/2 tsp salt (+ additional to taste)

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 2 tsp smoked paprika

  • 2 tsp dried oregano

  • 1/4 tsp red pepper flakes (optional)

  • 3 tbsp olive oil

  • 12 oz broccolini (can sub broccoli florets), cut into ~2-inch pieces

  • 4 garlic cloves, finely minced

  • 3/4 cup canned coconut milk

  • 1 cup chicken broth

  • juice of 2 lemons + additional for topping if desired

  • 3 cups baby spinach

  • 1/3 cup fresh chopped parsley, for garnish

Directions

  • Pat the chicken thighs dry on all sides with a paper towel, then cover completely with the salt, garlic powder, onion powder, paprika, oregano, and red pepper flakes.
  • Heat the olive oil over medium heat in a large, deep skillet. When the oil is hot, add the seasoned chicken thighs, skin side down, to the pan. Cook for 7-10 minutes, then flip each one and cook for another 7-10 minutes, or until fully cooked at an internal temperature of 165 degrees. Remove the chicken and set aside.
  • In the same pan, add the broccolini and toss in the oil. Sauté for 3-4 minutes, then remove and set aside.
  • Add the minced garlic, sauté for 1-2 minutes, then pour in the coconut milk and chicken broth. Bring to a simmer, salt to taste, then squeeze in the lemon juice and add the spinach.
  • Once the spinach has wilted down, place the chicken thighs on top and let simmer for a few minutes to warm the chicken back up. Top with the chopped parsley and serve immediately for best results.
  • If desired, serve over cooked rice, cauliflower rice, or pasta. Store leftovers in an airtight container in the refrigerator for 3-4 days.

  1. Assume the broccoli is cooked after sautéed and just gets served as side. Recipe doesn’t mention it after it gets sautéed

    1. Agree! This was left out of the directions!

      So my 10 year-old ate it with pasta. My 13 yo wouldn’t touch it. To her credit, the spinach looks nasty. I would eliminate this next time, especially with the apparent broccoli side dish.

  2. I just made this and it was pretty yummy. I used chicken breast and had to finish it in the oven but that seems fair. Would definitely try again with thighs.

  3. Tasty. It was more flavorful after it sat for a lot while. Made it pretty much as directed with a little bit less spinach as we don’t like a lot of cooked spinach.

  4. Kind of bland. Especially the broccolini. I tried to salvage it but, in the end, only ate it because I spend so much money on the chicken and veggies
