One Pot Tomato and Turkey Pasta

You’re just going to throw everything together in a skillet or pot and let it all cook together. This dinner will taste like you took a ton of time obsessing over all the details of a complicated recipe, without actually having to obsess over all the details of a complicated recipe.

This hearty and simple one-pot meal is sure to be hit!

Ingredients

  • 2 tbsp olive oil

  • 1 yellow onion, diced (can sub 1 shallot)

  • 1 lb ground turkey

  • 3 garlic cloves, minced

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1/4 tsp red pepper flakes (optional)

  • 32 oz tomato sauce

  • 2 cups chicken broth (can sub water)

  • 3 cups dry pasta of choice (I like penne for this one)

  • for topping (optional): fresh chopped basil, lemon zest, & ricotta cheese

Directions

  • Heat the olive oil in a large skillet or pot over medium heat and sauté the diced onion until translucent, about 5 minutes.
  • Add in the ground turkey and brown it all over, then add the garlic and spices, mix to combine, and sauté for 3-5 more minutes.
  • Pour in the tomato sauce, broth, & pasta. Stir to combine well & make sure the pasta is fully covered. Add a bit of water to fully cover if needed.
  • Cover the pot and cook on medium low heat for 14-18 minutes, until the pasta is al dente. Stir 2-3 times as it cooks to prevent any sticking.
  • Stir, then serve immediately or store in an airtight container in the fridge for 3-4 days.
