Chopped Peach Caprese Salad


This peach caprese salad feels like the kind of salad that just needs to be eaten on the beach or by the pool. It’s the no-lettuce salad of my dreams and with a little balsamic glaze drizzle on top… it’s just the best. Plus, this no-bake salad is SO incredibly easy to put together. Just mix everything together in a big mixing bowl and you’re ready to enjoy! It’s also the perfect side dish to bring to a barbecue or summer party.

This peach caprese salad feels like the kind of salad that just needs to be eaten on the beach or by the pool. It’s the no-lettuce salad of my dreams and with a little balsamic glaze drizzle on top… it’s just the best. Plus, this no-bake salad is SO incredibly easy to put together. Just mix everything together in a big mixing bowl and you’re ready to enjoy! It’s also the perfect side dish to bring to a barbecue or summer party.

Ingredients

  • 2 ripe peaches, pitted & cut into cubes

  • 2 cups cherry tomatoes, halved

  • 1 + 1/2 cups fresh chopped basil leaves

  • 8 oz container of mozzarella pearls, drained

  • 1/4 cup olive oil

  • 2 tbsp balsamic vinegar

  • 2 tbsp honey

  • salt and pepper to taste

  • optional: balsamic glaze for topping

Directions

  • Simply combine all ingredients in a large mixing bowl and mix well to combine.
  • When serving, top with a drizzle of balsamic glaze if desired.
  • Store in an airtight container in the refrigerator for up to five days.

  1. A little too much dressing on this one. I recommend making the dressing separately and pouring out as needed. A good flavor and twist to the traditional caprese

  2. This is so good! The sweet and tart peaches are an amazing addition to the traditional caprese flavors. We also tried with burrata which was also delicious! Perfect summer lunch option.
