Ingredients

  • 3 cups gluten-free or rolled oats

  • 1 tsp baking powder

  • 1 tbsp cinnamon

  • 1/2 tsp salt

  • 2 large ripe bananas

  • 3/4 cup creamy peanut butter

  • 1 egg

  • 1/4 cup maple syrup

  • 1 tsp vanilla

  • 1/2 cup dairy-free chocolate chips

  • 1/3 cup chopped walnuts (optional)

  • 2 tbsp hemp seeds (optional)

  • 1 banana sliced (optional)

Directions

  • Preheat oven to 350 degrees and line a bread pan with parchment paper.
  • In a medium-sized bowl, combine oats, cinnamon, salt and baking powder.
  • In a small bowl, mash the bananas until there are no big pieces, and then add the peanut butter, egg, maple syrup and vanilla. Mix until completely combined.
  • Pour the wet ingredients onto the oats and gently mix everything until combined. Add in walnuts and chocolate chips and mix once more.
  • Evenly pour the mix into the bread pan and press down throughout. Top with extra chocolate chips, hemp seeds and sliced banana.
  • Bake for 25-35 minutes, until a toothpick comes out clean. Allow bread to cool completely before slicing into 8-10 pieces.
