Slow Cooker Honey Balsamic Chicken Thighs

These Slow Cooker Honey Balsamic Chicken Thighs are perfect for batch prepping ahead of time and freezing in silicone molds for easy reheating on busy nights. Served a little differently each time, you can make it a bowl and serve over rice with a simple salad, or make it a sandwich and take on the go for lazy days by the pool or beach. Slow Cooker Honey Balsamic Chicken Thighs Ingredient Notes:
Honey: Raw honey retains bee pollen leading to increased health benefits from it’s antimicrobial and pre-biotic properties. The sweetness of the honey is balanced by the salty balsamic vinegar, forming a delicious marinade for the chicken to slowly cook and absorb. To elevate your honey game and feel extra fancy, treat yourself to a honeycomb and pot that’s both functional and aesthetic!
Balsamic vinegar: The star of the show! Balsamic vinegar has a sharp and tangy flavor with a touch of sweetness that is brought out by the addition of honey. This recipe can be quite vinegary, so if you’re looking for a different slow cooker chicken recipe, try out my honey sriracha one!
Tapioca flour: Despite only using a little, tapioca flour is a key ingredient in this recipe. It’s what helps our balsamic marinade thicken when mixed with water to make a slurry. You can also use arrowroot starch or cornstarch.
Chicken thighs: I prefer to use chicken thighs in most recipes, but especially slow cooker ones. The chicken stays moist and juicy while it absorbs the honey balsamic marinade. You can also swap for bone-in chicken thighs, or chicken breasts.
