Autumn Sheet Pan Tortellini with Whipped Honey Ricotta Ingredient Notes:
Butternut squash: Butternut squash adds cozy fall flavor and natural sweetness to every bite. When baked, it becomes caramelized and buttery soft, releasing moisture to help cook the tortellini on the same sheet pan. Ensure your squash pieces are no larger than 1/2-inch squares so they are fully cooked once baked! If you buy pre-chopped, you will likely need to cut them into smaller pieces.
Tortellini: The beauty of fresh and frozen tortellini is that it can be cooked with minimal to no liquid, as it bakes in the steam from the butternut squash and the oil from the sausage on the sheet pan. My favorite is this gluten-free, four-cheese tortellini.
Sage: Sage brings a warm, earthy aroma to the sheet pan components without overpowering the spicy sausage. Its light citrus-like flavor brightens the baked elements when paired with the sweet, honey ricotta base.
Tuscan or curly kale: While the squash, tortellini, and sausage get to know one another on the first round of baking, the kale and garlic are added on the second round, only needing a shorter amount of time to fully cook.
Italian sausage: Italian sausage adds bold, savory flavor and a touch of spice against the cool, creamy ricotta. Using spicy Italian sausage gives the dish depth and heat, while sweet sausage can be swapped in for a milder version. The sausage also provides a rich source of protein, making this sheet pan meal filling and satisfying.
