BBQ Stuffed Sweet Potatoes

These delicious BBQ stuffed sweet potatoes are hearty and delicious. And to top it all off, you can make extra to bring to work for lunch meal-preps. Make these once, and you will have a hard time not making these a part of your regular rotation!

Ingredients

  • For the Barbecue Sauce
  • 3 ounces tomato paste

  • 2 tablespoons olive oil

  • 2 tablespoons apple cider vinegar

  • 2 tablespoons honey

  • 1/4 cup coconut aminos, reduced-sodium soy sauce, or reduced-sodium tamari

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon chili powder

  • Kosher salt

  • Ground black pepper

  • For the Stuffed Sweet Potatoes
  • 1 1/2 pounds boneless, skinless chicken breast

  • 1 teaspoon kosher salt

  • 1/2 teaspoon ground black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika

  • 4 medium sweet potatoes

  • 2 cups chopped broccoli florets, about 1 head

  • olive oil, for drizzling

  • pinch kosher salt

  • 5 green onions, thinly sliced, for topping

Directions

  • Preheat the oven to 400°F and line 2 sheet pans with parchment paper.
  • Make the Barbecue Sauce: whisk all ingredients in a medium bowl until smooth and set aside.
  • Add the chicken, salt, black pepper, garlic powder, onion powder, and smoked paprika to a large bowl. Mix until the chicken is evenly coated. Add to one of the prepared sheet pans and bake until the chicken reaches an internal temperature of 165F, about 30 minutes.
  • Meanwhile, pierce each sweet potato a few times with a fork. Place on the second prepared sheet pan and bake until fork tender, about 45 minutes for a small to medium potato, up to 60 minutes for a large. (Note: You will be baking the chicken and potatoes at the same time)
  • When the chicken is done, remove from the oven and add to a medium bowl. Shred the chicken with a fork or in a stand mixer. Add half of the Barbecue Sauce and mix until the chicken is evenly coated. Add more as desired, reserving a few tablespoons for serving.
  • When the sweet potatoes are done, remove from the oven and slice lengthwise down the middle of each potato and gently mash the insides with a fork. Stuff each potato with a large scoop of barbecue chicken.
  • Add the chopped broccoli to the sheet pan with the stuffed potatoes and drizzle with olive oil and a pinch of salt. Bake the potatoes and broccoli until the broccoli is lightly crisp, 10 to 12 minutes
  • To serve, add a scoop of broccoli to each potato and drizzle with reserved barbecue sauce. Garnish with the thinly sliced green onion.

Notes

  • Storage: Refrigerate the potatoes, chicken, and broccoli in separate sealed containers for up to 4 days. Refrigerate the Barbecue Sauce in a sealed jar for up to 7 days.
  • Reheating: Microwave the components separately, then assemble.
  • If you’d rather buy a BBQ sauce, I recommend this one.
  • Cook Time: Depending on the size of your sweet potato, you may need to increase the baking time to 60 minutes. 45 minutes is the average for a small to medium sweet potato, anything larger will require additional time!

  1. I loved this recipe! Since I’m Italian and I don’t know much about American cuisine, I’ve been spending months to find recipes that both my American husband and I could enjoy. These stuffed potatoes are now my favorite dish and always make them for my guests. Everyone loves them!

  2. Great recipe! I would encourage others to add more time for the potatoes as even a medium size potato needs much longer than 45 mins to begin. This will greatly affect the amount of time to prepare this meal.
