Welcome to my fall grocery budget series! This is the fifth and final recipe from my latest series where I took a $55 grocery haul and turned it into five nights of healthy dinners. I absolutely loved putting together another one of my grocery budget series and it’s been so great to see all of your remakes of the recipes. Today’s final recipe is a fall salad that I’ve been loving lately – it has so many different tastes and textures that makes every bite delicious!

Tried this one a little while back… SO GOOD! For some reason, wild rice seems to not exist in my grocery store anymore, so used some black rice and it was still amazing!
The kale salad and the sheet pan chicken both call for 2 LBs of chicken thighs, but the grocery list forcthe entire week only mentions 2 total LBs of chicken thighs. I think there is a mistake somewhere. I am going to forge ahead and pick up some more chicken, I guess? The recipes have been very tasty!
Just found the note about half the cooked chicken in the recipe! But I think it would make it clearer to state that much earlier. Constructive criticism 🙂
Hi Ash! Apologies if this wasn’t clear enough – I tried to explain but it gets tricky when the grocery series translates to the recipes on my website! There are 2 pounds total and one pound is used for the salad while the other is used for the sheet pan! I instruct that the 2 pounds be cooked all at once so it’s easier when you’re following the week of recipes.
Love this one for meal prep for lunches during the week; so flavorful and filling 🙂
This salad was delicious! It was much easier than I thought it would be going in and the flavors were wonderful. I subbed thin-sliced chicken breasts for the chicken thighs and it was still great. And the dressing is so good. I’ll definitely be making this again.
