BUFFALO CHICKEN STUFFED SWEET POTATOES

These buffalo chicken stuffed sweet potatoes are simple and delicious! They are spicy and sweet, not to mention hearty and filling. This is a perfect way to get picky eaters to eat some veggies if you have some in your family, plus makes for the perfect meal prep. Put these stuffed sweet potatoes on your menu for this week’s dinner lineup!

Ingredients

  • 3 large sweet potatoes

  • salt & pepper to taste

  • 1 lb cooked, shredded, & seasoned chicken breast

  • 1/2 cup buffalo sauce

  • 1-2 tbsp olive oil or ghee

  • 6-8 slices of cooked bacon, chopped

  • ~1/2 cup cooked broccoli, chopped

  • 3-4 green onions, chopped

  • Extra buffalo sauce for topping

Directions

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • Season the chicken with all of the seasonings, add to the baking sheet, and place in the oven for 30 minutes.
  • At the same time, add another baking sheet with your sweet potatoes to oven as well. Before baking, pierce each potato a few times with a fork.
  • When the chicken is done, shred it up and toss with 3/4 cup of buffalo sauce.
  • When the sweet potatoes are tender to a fork (about 45 minutes but will vary based on size), slice them down the middle and mash the insides. Stuff them well with the bbq chicken. add the chopped broccoli to the baking sheet, cover with oil and salt, and bake on 400°F for another 10-12 minutes.
  • Remove from the oven, top with a buffalo drizzle and the broccoli, add some chopped green onion on top and enjoy!!
