Ingredients

  • 3/4 cup chopped dairy-free chocolate, plus additional for topping

  • 1/4 cup dairy-free butter (can use ghee or butter)

  • 2 large eggs

  • 3/4 cup coconut sugar

  • 1 tsp vanilla extract

  • 2/3 cup gluten-free 1:1 baking flour

  • 3 tbsp cocoa powder

  • 1 tsp baking powder

  • 1/2 tsp kosher salt

  • 1/2 cup mini marshmallows, for topping

Directions

  • Preheat oven to 350F. Line two large sheet pans with parchment paper and set aside.
  • In a glass bowl, microwave the chocolate in 15-second increments until melted, stirring in between each increment. Stir in the butter to combine and set aside.
  • In a medium bowl, whisk the eggs. Add the coconut sugar and continue whisking until it’s fully incorporated. Mix in the vanilla, then pour in the melted chocolate and butter mixture and stir to incorporate, until there are no streaks left.
  • In a separate bowl, whisk the flour, cocoa powder, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix until a thick, but wet, batter forms.
  • Use a 2-tablespoon cookie scoop to scoop the batter into 16 cookies. Evenly space the cookies 1-inch apart.
  • Bake until the edges spread and the tops crisp and crinkle, 6 to 7 minutes, then remove from the oven and carefully place 2-3 mini marshmallows and chocolate pieces on top of each cookie. Return to the oven and bake until the marshmallows are lightly golden, another 3 to 4 minutes. Cool completely on the baking sheet before serving.

Notes

  • Storage: Store leftover cookies in an airtight container in a cool, dry place for up to 4 days.
  • Swaps and substitutions: Swap the gluten-free flour for all purpose flour.
  • Note: Batter for these cookies is wet similar to brownie batter, that’s okay! trust the process on this one, it makes for airy, soft cookies.

  1. This recipe is AMAZING! The best cookies ever – the consistency is perfect and they are so so delicious!

      1. I’m sorry these went flat! This could happen for a few reasons – to troubleshoot, you could increase the flour to 1c but keep all other measurements the same. Also, GF flours can vary greatly by brand so if you’re using one, make sure it is a true 1:1 match for all-purpose flour (xanthan gum is key!) Chilling dough for at least 30 minutes before baking can also help cookies hold their shape. Let me know if you try these again!!
