Key Lime Pie Chia Pudding


While I do absolutely love doing some breakfast meal prep on Sundays, sometimes I just don’t have enough time for anything fancy. When I want a breakfast that’s packed with fiber and protein, but won’t take a lot of time to put together, chia pudding is typically my go-to. This key lime chia pudding is a perfect example of a 5-minute breakfast that lasts you the week in the fridge and you can grab it on your way out the door! I also learned that the term ‘key lime’ comes from the pie’s origin in the Florida Keys. Together with my strawberries and cream chia pudding, you’ll be taken on a tropical vacation right from your kitchen.While I may not be in Florida, this chia pudding is still sweet and creamy and also nutritious.

Limes

The key ingredient of a key lime pie inspired recipe is obviously your limes! Using both the juice and zest gets you that vibrant and fresh taste. I like to roll my limes on the counter to release the fibers and get more juice.

Chia seeds

A staple in my pantry, I like to stock up on these ones whenever I go shopping to always have some on hand for any of my favorite chia pudding recipes! Chia seeds are a great source of fiber to kickstart your morning or enjoy an afternoon snack.

matcha powder

This is optional, however the matcha powder will get you that nice bright green coloring in your pudding and contribute and earthy flavor. I love this one!

greek yogurt

I like to use a plain Greek yogurt here so as not to overpower any of the other flavors, however feel free to use your favorite yogurt! If you really want to enhance that key lime flavor, this one would be perfect!

Ingredients

  • 3 tablespoons chia seeds

  • 1/4 teaspoon matcha powder (optional, for color)

  • pinch kosher salt

  • Zest and juice of 1/2 lime

  • 1/2 cup unsweetened milk of choice

  • 1/2 cup Greek yogurt

  • 1 tablespoon maple syrup

Directions

  • Add the chia seeds, matcha powder, half the lime zest, and salt to a lidded jar and stir to combine.
  • Pour in the almond milk, lime juice, greek yogurt, and maple syrup. Mix until evenly combined, ensuring no chia seeds remain stuck at the bottom of the jar.
  • Secure a lid on each jar and refrigerate for at least 6 hours. Keep refrigerated until serving. Once ready, top with greek yogurt and remaining lime zest and enjoy! (note: this recipe makes 1 jar, adjust to you desired total)

Notes

  • Store it: Refrigerate in a sealed jar for up to 4 days.
  • Meal Prep: The measurements provided are for one jar, add these amounts to however many jars you’d like for the week! Keep refrigerated until you’re ready to enjoy.

  2. OMG. Tastes just like key lime pie. Love it. I will be making a big batch this weekend since no one else on my household will eat at so I will have my breakfast for the week! Yum!

  3. Planning to make it today…but why is the recipe only for one serving? XD I want it to last the week, so hopefully my math will math correctly.

    1. The serving is for 1 so people can multiply by how many they want to make! I find some want to make just 1 or 2, while others prep for a whole week. Plus since each one goes in one jar, it’s easier to measure that way!

  4. Made this with key lime Icelandic yogurt, coconut milk instead of almond and topped with unsweetened shredded coconut, a few crushed macadamia nuts and hemp seeds. So yummy!

    1. Hey Sandy! I use 12 ounce jars, you can use any jar 8 ounces or larger. The number of jars depends on how many you want for the week, the measurements listed in the recipe get added to each individual jar 🙂

  7. So so good!!! I only made one serving because I wasn’t sure how it was going to turn out, but I regret not having made more. I made it with whole raw milk, but did not add the lime juice until right before I ate it – I was afraid the milk was going to curdle. I will be adding this to my rotation.

  8. first time making any chia pudding and it was so yummy! I used Silk’s greek coconut milk yogurt for a dairy free alternative and it worked great.

  9. This is delicious!! I did double the lime juice and maple syrup the second time making it. I like the lime flavor to be much more intense!!
