Strawberries and Cream Chia Pudding
While I do absolutely love doing some breakfast meal prep on Sundays, sometimes I just don’t have enough time for anything fancy. When I want a breakfast that’s packed with fiber and protein, but won’t take a lot of time to put together, chia pudding is typically my go-to. This strawberries & cream chia pudding is a perfect example of a 5-minute breakfast that lasts you the week in the fridge and you can grab it on your way out the door! I like to store mine in these mason jars or these 12 ounce jars for easy meals on the go. It’s sweet and creamy and so delicious BUT also nutritious.



Strawberries & cream chia pudding ingredient notes:
Strawberries: The beauty of a good chia seed pudding is that you can really customize them to use any fruit you have on hand. My favorite, especially in the spring and summer is using bright fresh strawberries. Packed with vitamin C, antioxidants, and fiber, strawberries will help you kickstart your morning with a fun and colorful breakfast.
Protein Powder: The easiest way to reach your protein goals is by starting in the morning with an easy swap like adding protein powder to your breakfast smoothies, bowls, and chia seed puddings of course! My favorite is this vanilla one that I use in a lot of my chia seed puddings and overnight oats recipes.
Maple Syrup: Adding just the right amount of sweetness to these chia seed puddings, maple syrup is a great healthy alternative to other sweeteners. You can also opt for local honey if you are not making this vegan.
Chia Seeds: Believe it or not, these little super foods will keep you full all morning long with their high protein and fiber content. I find that allowing the chia pudding to soak overnight is the best option to allow the seeds to expand and soak up all that strawberry goodness.

This was so good! I topped with coconut yogurt & strawberries. 😋 I made six servings instead of 4 and needed more than 2.5 tbs of chia seeds per serving.
I used frozen cherries and it was 🔥
My 18 year old daughter who always skips breakfast and is “never hungry” could not get enough of this. She loved it and made eating on the go so easy! 💓🍓
I’m so confused… it says 2 and 1/4 cups of almond milk but that doesn’t even fill half of my jars. Is that right?
Hi Gina! Once the almond mix is blended with the strawberries and protein powder it will yield more liquid. I’m using 12oz jars in my video.
I’m not a fan of protein powder because I can usually taste an after taste. But this recipe masked it very well. Something probably obvious to others but not to me, was that you have to stir each container very, very well, otherwise the chia just stays at the bottom dry. Whoops. 😅 I topped it with strawberries and bananas, no yogurt. and it was delicious and filling! With all protein, I didn’t get hungry again until late in the day.
Do you stir the almond mixture with the chia seeds after pouring or just let it sit on top of the chia seeds?
Hi Eugenia! Yes, you’ll want to make sure the chia seeds are evenly dispersed in the jar prior to letting it sit!
Why did it change from pink to a sort of beige when I let it sit in the fridge?
Hmmm….I tried this and the pudding didn’t set up at all. The chia seeds aren’t all at the bottom – I stirred really well and see them in the middle of the mixture, but after setting overnight it’s still really watery.
