It takes 10 minutes or less to put together and packs in protein and veggies – perfect to pop in your cooler for a beach day, pack it in the car for a family trip to the lake, or make it your contribution to a summer dinner party with friends!

A bright, delicious salad that tastes like summer! It was so good that I ended up having some for a midnight snack. I substituted peas for asparagus and tuna for salmon because that’s what I had on hand. Next time, I’ll probably add more tuna for more protein. And “next time” will be soon !
