These oatmeal monster bars are perfect for celebrating anything – a birthday, a promotion, or even a day on the couch. They’re fun to make, so tasty and gluten free. The bars are similar to oatmeal cookies, but baked like brownies and cut into squares. Every time I make these monster bars, they’re a total crowd pleaser!

Oatmeal Monster Bar Ingredients
Coconut Oil: The main liquid component of the oatmeal bars is melted coconut oil. I use coconut oil for almost all of my dessert recipes because it works well for so many textures. You won’t get any coconut flavor, so don’t worry if that’s not your thing! If you’re looking for a substitute, melted ghee or olive oil will work.
Coconut Sugar: The oatmeal bars are sweetened mainly by coconut sugar. You could also use date sugar, but I don’t recommend maple syrup or honey because the consistency will likely be off. You can find coconut sugar at pretty much any grocery store, but brown sugar is a substitute as well.
Eggs: You’ll need two eggs for this recipe, which help to bind the ingredients together while they bake. I have not tried this recipe with flax or chia eggs, so I can’t speak to vegan options. The eggs are key to the success of the bars baking correctly.
Oat Flour: As I mention in the instructions for the recipe, you can either buy oat flour at the grocery store or make it yourself by blending a cup of gluten free oats in a high-speed blender. I always just make it myself to make things easier! It’s up to you.
Oats: I recommend using any brand of gluten-free rolled oats for this recipe. I usually order them from Thrive Market, but you can find them at any grocery store. I don’t recommend substituting the oats but you can of course use non-gluten-free oats if you don’t have an allergy.
M&Ms: I’ve recently discovered Unreal Milk Chocolate Gems and I’m obsessed. Honestly, they were what inspired me to make this recipe! They’re my favorite, but you can use regular M&Ms if you don’t have a preference or any other candy. Dairy-free chocolate chips would work great here too.

hi is this 1 cup of oat flour or 1 cup of rolled oats, then blended
you want 1 cup of oat flour for these, you can make your own oat flour by blending/processing old fashioned oats. If you do this, it may take about 1 1/4 to 1 1/2 cups of whole oats to get that yield

I had some oats in the cupboard that I wanted to use up and so I looked for one of your recipes, this recipe. As I started to collect ingredients, I realized I was going to have to do some substitutions. I substituted coconut sugar with maple sugar. I substituted oat flour with almond flour. I didn’t have my reading glasses on so I blended my oats instead of blending the flour. Lol. I used baking chips instead of M&Ms. And believe it or not, it turned out good! Thank you.
