I love a sheet pan meal, mainly because of the minimal cleanup time required, but this sheet pan chicken sausage and veggies meal is also great because it’s packed with delicious, crispy veggies and amazing flavors. This recipe is from my January 2023 series where I took a $75 grocery list and turned it into a week of dinners, and it’s one you and your family will love! I love a sheet pan meal, mainly because of the minimal cleanup time required, but this sheet pan chicken sausage and veggies meal is also great because it’s packed with delicious, crispy veggies and amazing flavors. Ingredients

  • 1 large sweet potato, 1/2-inch cubes

  • 1/2 red bell pepper, thinly sliced

  • 1 broccoli head, chopped into 1-inch florets

  • 6 oz baby bella mushrooms, sliced

  • 1 package italian chicken sausages (5 pre-cooked sausages), sliced

  • 2 tbsp olive or avocado oil

  • 1 tsp kosher salt

  • 1/2 tsp ground black pepper

  • 1 tbsp italian seasoning

  • 2 tsp smoked paprika

  • 2 tsp garlic powder

Directions

  • Preheat the oven to 400F and line a large sheet pan with parchment paper.
  • Add the sweet potato, broccoli, mushrooms, and sliced sausages to the pan in one even layer.
  • Toss everything in the oil, salt, ground black pepper, italian seasoning, paprika, and garlic powder until evenly coated. Bake for 20-35 minutes, until the veggies are tender and the sausages have crisped edges.
  • Divide the vegetables and sausage evenly among 4 bowls to serve. Option to top with a red sauce, or other preferred sauce.

Notes

  • Storage: Refrigerate in a sealed container for up to 4 days.
  • Reheating: Microwave in a microwave safe dish for 2 to 4 minutes. Heat in the oven of air fryer at 350F for 10 minutes, until warm.

  1. Hi, you should note in the ingredients that the chicken sausage should be fully cooked before going into the sheet pan mix! This isn’t clear from your instructions.

  2. I swap the mushrooms for squash, and cook at 375 for 40 minutes, doing the first 10 only with just potatoes just to accommodate my oven and potato preferences

    We love this recipe!
