Teriyaki Tofu with Mango Salsa

This teriyaki tofu with mango salsa will blow your mind, even if you don’t typically eat plant based meals! It’s a meal perfect for a warm summer night because of the fresh mango salsa (make sure you get a ripe mango!!) and reminds me of hot days by the pool. This teriyaki tofu with mango salsa will blow your mind, even if you don’t typically eat plant based meals! Ingredients

  • MANGO SALSA
  • 1/2 small red onion, chopped

  • 1 ripe mango, cubed

  • 1/2 avocado, pitted and cubed

  • 1/3 cup fresh chopped cilantro

  • juice of 1 lime

  • kosher salt, black pepper, and red pepper flakes to taste

  • TOFU
  • 14 ounces firm tofu, pressed*

  • 1 tablespoon tapioca flour, arrowroot starch, or cornstarch

  • TERIYAKI SAUCE
  • 1/3 cup coconut aminos

  • 1/3 cup water

  • 1/4 cup pure maple syrup

  • 2 tablespoon rice vinegar

  • 1 tablespoon toasted sesame oil

  • 1 big garlic clove, minced

  • 1 tablespoon minced fresh ginger

  • FOR SERVING
  • 1 cup basmati or jasmine rice, cooked according to package instructions

Directions

  • Make the mango salsa: combine all the ingredients for the salsa in a medium bowl. Chill until serving.
  • Make the sauce: combine all the ingredients in a medium bowl.
  • Cut the pressed tofu into 1/2-inch cubes and add to a large bowl. Toss to coat with 1 tbsp of starch. Pour the sauce in the bowl and let sit for at least 10 mins.
  • Heat a large skillet over medium heat with a tablespoon of oil. Add the tofu and sauce, and cook, stir constantly for 10-15 minutes, until the sauce is a thickened.
  • Serve over cooked rice, and top with the mango salsa.

Notes

  • Method: To press the tofu without a tofu press, wrap the block in paper towels or a clean kitchen towel. Place a heavy object or pot on top of the block for 30 minutes.
