this week’s overview
It’s Sunday again and that means I’m sharing another meal prep rundown with you all! This week I wanted to focus on keeping prep time short, but not compromising on delicious flavors. I ended up making three recipes that all came out so good & took less than 15 minutes each to prep- cherry pie chia pudding, zucchini, corn, and basil orzo salad, and sheet pan chicken thighs with cherry tomatoes, chickpeas, and pesto. I also include the recipe for a quick side of roasted Japanese sweet potatoes in the meal prep youtube video! we’re definitely getting a high reward with minimal prep time, proving you don’t have to spend hours in the kitchen to make flavorful and nutritious meals!
