this week’s overview
It’s Sunday again and that means I’m sharing another Sunday meal prep rundown with you all! This week I wanted to focus on two things: making budget-friendly nutritious recipes and using up delicious summer produce. I ended up making four recipes that all came out so good – peach crisp baked oats for breakfasts (which I paired with greek yogurt mixed with honey and cinnamon), slow cooker honey sriracha chicken thighs and zucchini chicken meatballs for easy protein options, and a summer berry quinoa salad. I’m definitely getting the most out of summer produce, and you should too!
