Lemon Chia Overnight Oats

Lemon chia overnight oats are the perfect on the go breakfast option! Just prep at the beginning of the week, and take it with you in the morning. The prep is quick and easy. And on top of that, the oats are zesty and delicious – not to mention full of fiber!

This gluten free chia oats recipe is zesty and sweet (but not too sweet) and is packed with filling fiber. Multiply by the amount of servings you’d like to make!

Ingredients

  • 2 tablespoons chia seeds

  • 1/3 cup gluten-free rolled oats

  • 1/4 cup vanilla protein powder (see note)

  • pinch of kosher salt

  • zest and juice of 1/2 lemon

  • 1 cup milk of choice

  • 1 tablespoon maple syrup (optional, see note)

Directions

  • Add the chia seeds, oats, protein powder, salt, and lemon zest to a 10-12 ounce jar and mix well to distribute.
  • Pour in the lemon juice, milk, and maple syrup (if using) and mix again, ensuring no dry clumps are stuck at the bottom of the jar.
  • Cover the jar and refrigerate for at least 6 hours, then serve.

Notes

  • If you are not using a sweetened protein powder, I highly recommend adding 1 to 2 tablespoons of maple syrup to each jar. Otherwise the oats will be too bitter.
