Crunchy Peanut Butter Freezer Fudge


My personal requirements for a sweet treat I love are that there’s different textures and flavors involved, it’s not going to take a ton of ingredients, and I can throw it together very quickly. This crunchy peanut freezer fudge checks all of those boxes PLUS it’s made with super simple ingredients. Keep it in your freezer for when that sweet treat craving hits after dinner!

Ingredients

  • 1 cup creamy peanut butter

  • 1/4 cup melted coconut oil

  • 2 tablespoons maple syrup

  • 3/4 cup raw or roasted peanuts, roughly chopped

  • flaky sea salt, for topping (optional)

Directions

  • Line an 8×8 baking dish with parchment paper and set aside.
  • Add the peanut butter, coconut oil, and maple syrup to a large bowl and whisk until evenly combined and smooth in texture. If needed, microwave in 15- second increments to further soften the peanut butter.
  • Fold in the peanuts, then transfer to the lined pan, spreading out evenly. Freeze for at least 45 minutes to set. Cut into 8 even squares and keep frozen until enjoying.

Notes

  • Storage: Keep frozen in a sealed container before serving. Store in the freezer for up to 1 month.
  • Defrost at room temp for 10 minutes before serving for a softer fudge.

  1. Do you recommend salted or unsalted peanut butter? What about salted or unsalted nuts? If both are available at the store, any preference for roasted versus raw peanuts? Thank you!

    1. My, Katie you certainly have a lot of questions! For this fudge I recommend that you use salted peanut butter and raw, unsalted peanuts or if you don’t have peanuts, almonds will work just fine. Have a amazing day, Katie!!

  2. Do you recommend a processed creamy grocery store type peanut butter (ie Jif/Skippy) or will something more natural (like a grind-your-own kind from natural food stores or a Crazy Richard’s type) work just as well? Thank you!!

  3. If you do not have coconut oil, go to the store or ask your neighbour to simply borrow it. Or use vegetable oil too. I really don’t know if it will effect the taste but try it on my behalf.
