WEEKLY MEAL PREP | JUNE 30th

this week’s overview

Since it’s been so hot here in Boston lately, I decided to make this week’s meal prep 100% no-bake or no-cook. I wanted to take on the challenge of creating recipes that don’t require an oven because I know that’s all what we really want in the summer! For breakfast I prepped key lime flavored chia puddings and they came out so good. for lunches, I prepped some no-bake buffalo chickpea lettuce wraps as well as a crunchy carrot salad with a date peanut sauce. both were filling, delicious, and simple to make. finally, for a dessert I prepped a new flavor of my freezer fudge-crunchy peanut. It tastes like a payday bar! Give these ones a try if you’re also melting in the summer heat.
