this week’s overview
I mainly focused on ingredient prep this week because I knew I would need some quick options to throw together different meals. so, I roasted some sweet potatoes and baked some chicken thighs to add to grain bowls and salads throughout the week, then prepped two quick options: my strawberry, goat cheese, and chickpea salads and my zesty lemon chia puddings. everything was delicious!
